Carole's Delicious Italian Sausage Soup

Italian Sausage Soup

Serves 6


1 pound mild Italian sausage

2 cloves of garlic, minced

2 TB extra virgin olive oil

1 (32 oz box) of organic beef broth + 1 cup vegetable broth

1 (14.5 ounce) box of diced tomatoes

1 cup sliced carrots

2 (14.5 ounce) cans Great Northern beans, undrained

2 potatoes, cubed 

1 cup chopped spinach  

1 bay leaf

Dash of crushed red pepper

salt and pepper to taste (needs very little to no salt) 


Heat the olive oil and add the red pepper to the oil. Brown sausage with garlic in oil. Stir in broth, tomatoes and carrots. Reduce heat, cover, and simmer 15 minutes. (Can be prepared several hours ahead and left to warm on the stove.)

Stir in beans with liquid and potatoes. Cover, and simmer another 15 minutes or until potatoes are tender. Remove from heat, and add spinach. Replace lid allowing the heat from the soup to cook the spinach leaves. Soup is ready to serve after 5 minutes.

Serve with a sprinkling of parmesan and garlic bread.
